Before it’s made into chocolate, cacao is processed into cocoa liquor, which can then be further separated into cocoa powder and cocoa butter. Cocoa butter is the fat portion of cacao, and gives chocolate much of its texture. While cocoa powder has many of cacao’s antioxidants and other nutrients, cocoa butter is a healthy fat when consumed in moderation.
