Cacao -- sometimes called cocoa -- is the part of the cacao fruit seed or beans that we make chocolate from. Prior to becoming chocolate, the beans (shown above) are skinned and then processed into cocoa liquor, which has roughly equal parts of both cocoa solids (cocoa powder) and cocoa butter (the fat portion of cacao) when it is separated.
